Does anyone know if the React and React Native courses are up to date, and when they were last updated?

Most likely the React Native course hasn’t been updated.
On the flip side, I don’t think much has changed in the React Native world during this time.
You may come across newer library versions (I suggest you always install the latest dependencies where possible). If you ever face issues in doing so, you can either take help from ChatGPT / QnA sites or ask your questions here (feel free to send me a DM with a link to the thread, and I’ll take a look). This whole process is great for learning.
