Really struggling to to install the python extensions to my Mac on VS code,
Im not even getting the “Linter Pylint is not installed” tab come up,
Anyone else have this issue?

Sorry you are having issues. I run MacOS as well, but I am not having any issues. Check this out and see if it helps.
